Elevate your palate to new heights at The Signature Prime Steak & Seafood, located on the 36th floor of Ala Moana Hotel, where stunning views of Honolulu accentuate every dining experience. The 275-seat restaurant specializes in prime cut, dry-aged beef and spectacular seafood selections.
This week, Dining Out reveals a stellar off-the-menu item that already has drawn quite a fan base. Recently, the restaurant debuted Wagyu Tomahawk Long Bone, and according to general manager Jacque Viloria, it’s been a show-stopper ever since. Say hello to a carnivore’s heaven on earth!
“The bone adds a lot more flavor and a lot more marbling. The flavor profile is out of this world and oh, so juicy. Tomahawk is a class above the rest. It’s a super ribeye,” Viloria states.
“This particular cut of meat is very unique to the Islands, and the response has been amazing. We get shipments in from Chicago Wednesdays or Thursdays of every week, and it’s been selling out rather quickly.”
This 28-ounce ribeye cut is a wagyu-grade meat and aged to perfection. It’s broiled at a high heat and encased in its own juices that permeate throughout the meat.
This feast is accompanied by Signature’s Rustic Truffle Mashed Potatoes, which is played up with an alluring blend of truffle oil, truffle shavings, green onions and a special mix of seasonings. Truffle mashed potatoes and the Tomahawk are the perfect marriage of flavors for any food enthusiast.
Tomahawk is seasoned with kosher salt, pepper, garlic powder and onion powder. According to Viloria, the seasoning enhances the flavor of the meat, while not overpowering it in the least.
“People love to eat along the bone, and some have even called it the Flintstone cut. It’s a fun piece that’s a crowd pleaser both to the eye and to the palate,” Viloria says.
