Ever wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience.

This week, Dining Out gets the inside scoops from Good to Grill kitchen manager Keola Kanamu, who gives us a little taste of Good to Grill and shares just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? My wife, family and friends serve as my inspiration. I’m also inspired by Steve Khole of Alpengowstube, one of North America’s top four-diamond restaurants.

If you could serve food to a celebrity, who would it be and why? What dish would you serve? My wife is the only celebrity in my life. I enjoy cooking for her and our soon-to-be daughter.

What is your favorite dish on the menu? Why? My favorite dish on our menu is Braised Short Rib Loco Moco, because it’s a great combination of our loco moco with a twist of our famous braised short ribs.

Is there a dish that you create that’s not on your menu, but available upon request? Again, Braised Short Rib Loco Moco.
