Ever wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience.
This week, Dining Out gets the inside scoops from Violet’s Grill co-owner Joey Suehisa, who gives us a little taste of Violet’s Grill and shares
just what fuels her culinary drive.

Who or what inspires you as a chef/manager/owner?
The TV show Iron Chef. It’s incredible how the contestants can create something amazing while utilizing different ingredients under pressure.

What is your favorite dish on the menu? Why?
My favorite dish is Steamed Opakapaka because it’s so soft and tender, and has great flavor.

What is your favorite ingredient to work with? Why?
Shoyu. I like the saltiness.

Is there a dish that you create that’s not on the menu, but available upon request?
Yes, Udon Stir Fry, which is made out of tuna, green onion, udon and dashi stir-fried together.

What are your culinary goals?
Learn how to make fancy ramen and expensive sushi.
