Parked on the corner of Kapahulu and Kaimuki avenues is Blue Water Shrimp and Seafood Company, a food truck that pushes the boundaries when it comes to seafood. Known for its fresh fish and seafood plates at affordable prices, Blue Water Shrimp and Seafood Company is open daily for breakfast, lunch and dinner. And while Blue Water Shrimp and Seafood Company may not initially catch the attention of vegetarians, owner Gilbert Sakaguchi says the eatery’s Vegetarian Omelette is geared especially toward non-meat eaters and the health conscious, with an emphasis on local. This is a top-pick, guilt-free breakfast delight.

Blueberries accent the dish and are considered a premier fruit as they have the highest antioxidant capacity of all fresh fruit, aid in reducing belly fat, help promote urinary tract health and neutralize free radicals in the body.

Low in calories and a safeguard against cancer, mushrooms provide an abundance of flavor and an added texture to the dish. According to Sakaguchi, the mushrooms are grown in the Islands.

Spinach aids in digestion, prevents constipation, maintains low blood sugar and curbs overeating. Rich in antioxidants, this veggie also helps to combat the onset of osteoporosis and high blood pressure.

Red bell peppers, cilantro, onions and broccoli also complete the omelette. Seasoned with salt and pepper, these veggies help to optimize the heartiness of the dish.
