Watching the sunset over the Pacific in Waikiki is one of the best “lucky we live Hawaii” pleasures. And if you’re also relaxing in a casual, seaside ambiance with a cocktail and some ono food, well, it doesn’t get any better than that.

You don’t need much more, except maybe someone nice (or two or three) to share the moment. A fun idea for non-meat eaters is to order up a few sides and starters and let everyone have at it.

Shor American Seafood Grill is located on the third floor of the Hyatt Regency Waikiki Resort and Spa Diamond Head Tower, giving diners a bird’s eye view of Waikiki Beach. Its menu reflects its name, offering fresh fish and American favorites — and there’s nothing more American than watermelon.

Listed as a side, Watermelon and Tomato Salad ($12) features sugar-charred watermelon and fresh tomatoes dressed in a balsamic reduction and topped with roasted pistachios. The flavors and textures balance deliciously with every bite.

If cheese is part of your diet, Shor’s Pear Salad ($14) is a mix of tender young greens, pears, cucumbers, macadamia nuts and Maytag blue cheese tossed in a sweet-tart mango dressing — an irresistible combination.

The ultimate in comfort food, Shor’s Truffle Mac ‘n’ Cheese ($7) is prepared with about nine different cheeses (oh, my) and truffles topped with a golden bread-crumb crust. Mmm.

When it comes to relaxation, Hyatt Regency Waikiki marketing communications manager Laura Van Sciver has the right idea.

“Shor is on a terrace,” she says. “Just order some mac ‘n’ cheese, grab a cocktail and enjoy the sunset!”

Great advice.
