Always wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience.

This week, Dining Out got the inside scoops from Shore Bird Restaurant and Beach Bar’s general manager David Nagaishi, who gave us a little taste of Shore Bird and shared just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner?

Our company inspires me. Our company always encourages us to improve and try new things — to go out and research new things, be creative and be supportive toward one another. Our team here at Shore Bird enjoys working together to create a great dining experience for our customers. Teamwork is very important, and it’s inspiring to have wonderful employees helping each other out.

What’s your most popular dish?

For our breakfast buffet it’s a toss-up between our pastries that are baked fresh daily from our bakery, the fresh fruit, and our hand-carved turkey and honey ham. For lunch it has to be our handmade Angus beef burgers served on a sweet bread bun. I’ve got to say the Cheesy Burger is my favorite made with four types of cheese. The Shrimp and Sausage Kabob and the Rib Eye Steak are our popular entrees for dinner. For dessert, it has to be our homemade brownie sundae, served warm with a scoop of ice cream.

What is the biggest compliment you’ve ever received as a chef/manager/owner?

The biggest compliment that I could ever receive is when my customers come back year after year. We have been open for more than 30 years and see many returning customers. It is always great to see people who have been visiting us for years bringing their children, friends and family.

If you could serve food to a celebrity, who would it be and why? What dish would you serve?

To me everyone is a celebrity, we treat all our guests like celebrities, and they can have anything off the menu — everything is great.
