At Fresh Catch, the secret lies in the sauces, and now owner and chef Reno Henriques has bottled these saucy creations for purchase. As one of Oahu’s top spots for “Island-Style” seafood and meats, Fresh Catch specializes each day in serving fresh poke 30 different types, mind you marinated meats, sashimi platters, crab rolls and a variety of assorted meals. And behind many dishes are Fresh Catch’s own sauces and marinades all created by Henriques himself that have literally brought an exciting new flavor out of each dish, whether it be fish, meat or salads.

  • Chef Reno's renowned sauces are showcased in many of his creations.
  • Sauteed Garlic Shrimp ($10.50) with Saute Sauce and Spread
  • Spicy Ahi Poke Salad (market value for fish, additional $1.50 for salad greens)
  • Ahi Katsu ($10.25) with Original Savory Sauce
  • Fresh Catch's Amigo Lamberto, Leonard Lee, Ona Souza, Reno Henriques and Donna Baptiste

“We started bottling our salad dressings and savory dipping sauces about six months ago. All of the sauces started off in the kitchen, and the next thing you know we have a new dish,” Henriques says.

Chef Reno points out a few favorites that you may want to try at your next party, especially with football and tailgating season fast approaching. Chef Reno’s Spicy Hawaiian Sauce works great for turning an ordinary dish into a spicy delight, especially ahi poke. Chef Reno’s Tasty Poke Marinade also works well for poke on its own or in a salad, and Chef Reno’s Original Savory Sauce is just as tasty as a marinade for your chicken, fish or meats. Henriques highly recommends his Saute and Spread for shrimp, mushrooms and even garlic bread. However, it’s Chef Reno’s Creamy Salad Dressing that is the highlight of his sauces.

“Our most popular sauce is our salad dressing. We sell out wherever we go expos and events. They are very good; people love it.”

All bottled sauces can be purchased for $5.99 at the Kaimuki and Kaneohe locations. For $25, Fresh Catch offers its sauces in gift sets with two bottles of Creamy Salad Dressing and one bottle of Original Savory Sauce, or as poke packs with four sauces with one of each; Original Savory Sauce, Oriental Creamy Salad Dressing, Smokin’ Hawaiian BBQ Sauce and Tasty Poke Marinade. You may purchase Chef Reno’s gift sets and poke packs by ordering online at fcsauces.com or call 227.9935.
